Peanut Butter Thumbrints

While surfing the net for Christmas cookies I found lots of thumbprints recipes, so I thought, well, if they are this popular, I should at least have a try. Usually, I am not that much into peanut butter, but since we still had a jar, I decided do make those.
 
All you need is:
1 1/4 cup flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
3/4 cup smooth peanut butter (mine had little peanut pieces, but that actually does not matter)
1 stick butter at room temperature
2/3 cup sugar, plus more for rolling
1 egg
1 tsp. vanilla extract
1/2 cup jam (I used a self-made mulled wine jelly)

Step 1:
Mix flour, baking powder, baking soda and salt. In another bowl beat butter and peanut butter until smooth. Add sugar and beat until light and fluffy. Add egg and vanilla and beat again. Add the flour mixture and carefully mix again until well combined.


Step 2:
Scoop level tablespoons of dough and roll into small balls. Fill some sugar into a small bowl and roll each ball in it, until covered. Position the sugared balls onto a lined baking sheet, about 2 inches apart.


Step 3:
Bake for about 10 minutes. Take out of the oven and press the handle of a wooden spoon into the centre of each ball, to make an indentation. Bake for another 6-7 minutes.
Step 4:
When the cookies are completely cooled down, heat the jam or jelly in a small saucepan until there are no lumps left and spoon about 1/2 teaspoon into each indentation. Let dry.

 
Actually, I wanted to post a picture with more cookies, but the moment I thought about it, there was only one cookie left. So, you see how yummie they must be :)
