Chai Cookies

I don't know whether you've noticed, but I LOVE spices. So here is another cookie recipe with lots of spices. I made them for my bunch of weird people. It was a weekend where I played my 'baking mistress' again :)
By the way, this recipe is a slightly adjusted Betty Crocker one.




All you need for the Chai Cookies is:

2 sticks butter (at room temperature)
1/2 cup confectioner's sugar
2 cups flour
1 1/2 tsp. ground cardamom
1 1/2 tsp. ground allspice
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1/2 tsp. ground ginger
1/2 tsp. ground cloves
1/2 tsp. salt
2 tsp. vanilla extract
2 egg yolks

Coating:
1 cup confectioner's sugar
1 tsp. ground cinnamon


Start off by mixing the butter and sugar until blended and fluffy. Then, add the remaining cookie ingredients and mix until well blended. In the end, I prefer to knead the dough once more to make sure all ingredients are well mixed.



Now shape the dough into small balls, about 2-2.5 cm in diameter. Place them about 5 cm apart onto a baking tray.

 

Bake each tray on 180°C for 12 - 15 minutes.
Meanwhile, prepare the coating by mixing both ingredients in a bowl. 
When the cookies are done, let cool for five minutes and roll the warm cookies in the mixture. Cool another five minutes and roll in the coating mixture again.

 

Then, let cool down completely. And then, finally, enjoy :)
