Marzipan Pillows

They do look like pizza rolls on the picture, don't they? o.O
Well, actually, they are sweet and are filled with marzipan, as the title indicates. When you have the first bite, they do not seem very special, but when you have finished your first bite the marzipan comes in and suddenly the whole plate is empty... :)


What you need:

300 g flour
100 g confectioner's sugar
1 pinch salt
200 g cold butter
2 eggs
300 g marzipan
2 tbsp. lemon juice
8 drops almond flavour

First, make a dough out of flour, sugar, salt, butter and two egg yolks (Do NOT discard the whites, you will need them!), which means put all the ingredients into a bowl and knead them. Form rectangles (about 20cm x 15cm) out of the dough and wrap them into cling foil. Put into the fridge for at least two hours.

Grate the marzipan and mix them together with the egg whites, lemon juice and almond flavour. This will take a while because you have to mix until there are no pieces of marzipan left. It has to completely dissolve in the other ingredients.

Cut the dough into four pieces of equal size. Roll those pieces on a floured surface into stripes of 8 cm length and 3 mm thickness. Place these stripes onto a lined baking tray and let sit cold for 15 minutes. 

Spread 1/4 of the marzipan mass onto each stripe. Then, fold each stripe in the middle (long edges together), as if folding a piece of paper and cut them into 2 cm pieces. Now, place them onto the lined tray with the centre-cut down. Bake on 180°C for about 12 - 14 minutes.
