(Not so) Thin Mint Cookies

A friend of mine's mother always makes them for Christmas and since I love (pepper)mint, I asked for the recipe :)


It is rather simple, but quite messy, if you do not like your hands to get dirty. But, actually, if you really did not, you would not follow a blog that is mainly about baking, right?

So here is what you need:

450 g powdered sugar, sifted
1 egg white
2 tsp. lemon juice
peppermint oil

Mix all the ingredients thoroughly with your hands and then roll out the dough and cut out simple forms. Let dry for half an hour and then completely cover with melted chocolate, preferably dark chocolate. Let dry. Ready.
